Yorkshire Pudding
Ingredients
- 1 cup flour
- 1/2 tsp salt
- 2 eggs
- 1 1/8 cups milk
- 3/8 cup water
- 2 tbsp beef drippings
Directions
- Sift flour with the salt into a bowl.
- Make a well in the center and add the eggs with alf the milk and water.
- With a wire whisk or fork, stir so you gradually draw in all the flour to make a smooth batter.
- Add remaining liquid and beat with whisk or fork until large bubbles form.
- Cover and let stand for at least 1 hour before cooking.
- Heat 2 tbsp beef drippings and pour into an 8x12 pan or 12 muffin cups, tilting to cover sides and bottom.
- Add the batter (all in 8x12 pan or about 1/2" in muffin cps).
- Bake at 425-450; or on shelf above the roast you are cooking.
- Large pudding will take 30-40 min; Muffin cups about 20 min.
- Serve with roast beef and "au jus" gravy.
