Sweet Potato Biscuits
Ingredients
- 2-3 medium sweet potatoes
- 1/2 cup butter or marg.
- 1/2 cup sugar
- 2 tablespoons milk
- 1 teaspoon salt
- 3 1/2 - 4 cups all purpose flour
- 4 1/2 teaspoons baking power
- 1/2 teaspoon allspice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground cloves
Directions
- Boil, peel and mash potatoes.
- While mashed potatoes are still hot,
measure 1 1/2 cups in a large bowl.
- Add butter, surgar salt and milk.
- Mix well
- Sift together flour, allspice, cinnamon,
ground cloves and baking powder and
add potato mixture.
- Work with hands to make a soft dough.
- Chill dough, rol out and cut into biscuits.
- Bake on greased cookie sheet on top shelf of
400 degree oven for 15-20 minutes until
golden black.
Makes 12 biscuits.
