Spinach Casserole
Spinach Casserole
- 1 carton cottage cheese (12 oz)
- 1/2 stick butter (1/8 lb)
- 2 (10 oz each) pkg frozen chopped spinach
- 3 eggs
- 8 oz (1 cup) grated cheddar cheese
- 3 tbsp flour
Directions
- Cook spinach according to package directions.
- Drain very well, squeezing excess liquid out.
- Beet eggs lightly.
- Mix cottage cheese and eggs.
- Add diced butter and grated cheese.
- Add cooked spinach and flour.
- Bake in 1.5 qt casserole at 350 for 1 hour.
