Quinoa Tacos

TOTAL TIME: about 45 minutes

Ingredients:

1 cup quinoa
1 cup chicken or vegetable broth
3/4 cup water
taco seasoning
taco shells
shredded lettuce
colby jack shredded cheese (or some inferior substitute)
salsa
guacamole or avocado

Instructions:

1. Put a saucepan on the stove and turn heat on medium. Rinse quinoa and put in hot saucepan to toast for 3-4 minutes.
2. Add chicken/vegetable broth and water to saucepan. Bring to a boil and then cover and reduce heat to medium-low, cooking for 15-25 minutes or until liquid is completely absorbed.
3. Preheat oven to 375 degrees F.
4. (Optional) Fluff quinoa with a fork and let rest for 10 minutes off the heat.
5. Add enough taco seasoning to satisfy your taste buds to the quinoa and mix thoroughly.
6. Spread quinoa on a greased baking sheet and bake for 20-35 minutes, stirring/tossing at halfway point to ensure even baking. The quinoa is done when it is fragrant and golden brown. Be careful not to burn!
7. Cook taco shells according to package. Do not cook taco shells in toaster!
8. Fill taco shells with quinoa, lettuce, salsa, cheese and guacamole.
