Healthy Chicken Salad

Ingredients:

3 cups shredded, cooked chicken
2 tbsp olive oil
2 tbsp lime juice
1 cup fresh salsa (pico de gallo)
10 oz chunky guacamole
tortilla chips 1/2 tsp kosher salt (optional)

Instructions:

0. Make sure chicken is already shredded
1. Mix olive oil, lime juice and salt in a mixing bowl
2. Add shredded chicken and mix until chicken is coated
3. Add guacamole and salsa and mix well
4. Scoop mixture onto chips

Note:

I usually just use all the white meat from a rotisserie chicken, or most of the white meat from a Costco sized rotisserie chicken. However, if you want to actually measure it, 3 cups of shredded chicken works well.
