Quick Coffee Cake
9x9 in. pan.
Preheat oven to 375.
Sift together:
- 1 1/2 cups sifted all-purpose flour
- 1/4 tsp salt
- 2 tsp double-acting baking powder
Cream until soft in a large bowl:
Add gradually and cream until light:
Beat in:
Add the sifted ingredients to the butter mixture:
Add:
- (3/4 tsp grated lemon rind or 1/2 tsp vanilla)
Stir the batter until smooth. Spread in a greased pan.
Cover with Streusel. Bake about 25 minutes.
Streusel Topping
After spreading ('dotting') cake with butter, combine:
- 2 tablespons all-purpose or rice flour
- 2 tablespoons butter
- 5 tablespoons sugar
Blend these ingredients until they crumble.
Add:
1/2 tsp cinnamon
Sprinkle the crumbs over the cake and bake as directed.
