Country Fried Steak
Makes 4 servings (1 serving for Dan)
Ingredients
- 5 T flour (divided)
- 1/4 cup corn meal
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 cube steaks (1 lb)
- 2 egg whites
- 1 tsp water
- 2 T oil
- ******** gravy *****
- 1 T Butter/marg.
- 2 Tbs flour
- 1 1/2 cup milk
- 1 tsp beef bouillon
- 1/2 tsp dried marjoram
- 1/4 tsp dried thyme
- 1/8 tsp pepper
Directions
- Combine 3 T flour, cornmeal, salt, pepper. Set aside.
- Coat steaks with remaining flour.
- Beat egg whites and water.
- Dip steak, then dredge in corn meal mixture.
- Cook in skillet over med-hi heat with 1 T oil per steak.
- ******** Gravy ********
- Melt butter, stir in flour.
- Gradually add milk.
- Bring to boil over med. heat.
- Boil 2 min.
- Add bouillon, marjoram, thyme and pepper.
- Simmer 4-5 minutes.
Note: I usually double or triple the flour and corn meal with larger cube-steaks.
