Chocolate Angel Strata Pie

Ingredients:

2 large eggs, separated
1/2 tsp apple cider vinegar
1/4 tsp cinnamon
1/2 cup sugar
1 cup semi-sweet chocolate chips
1/4 cup water
1 cup heavy whipping cream
1/4 cup sugar
1/4 tsp cinnamon
1 baked pie crust*

Instructions:

Preheat oven to 325ºF

Layer 1:

1. Beat 2 egg whites and 1/2 tsp vinegar until soft peaks form.
2. Slowly add 1/2 cup sugar and 1/4 tsp cinnamon. Beat until meringue stands in stiff glossy peaks.
3. Spread evenly on bottom and sides of baked pie shell. Be sure to cover entire crust.
4. Bake at 325ºF for 15-18 minutes (until lightly browned)
4a. While layer 1 is baking, start layer 2

Layer 2:

1. Put 2 egg yolks and 1/4 cup water in a saucepan. Mix well with a fork. Add chocolate chips.
2. Melt on low heat, stirring constantly.
3. Once 1st later is cooled, spread a thin layer of chocolate mixure on meringue. Save the remaining mixture (and allow to cool) to be added to layer 4 later on.
4. Chill pie.

Layer 3:

Start after layer 2 is set.
1. Combine whipping cream, 1/4 cup sugar and 1/4 tsp cinnamon. Whip until stiff.
2. Spread 1/2 of this on the pie.

Layer 4:

1. Take remaining layer 3 and layer 2 ingredients. Combine and mix thoroughly.
2. Spread on top of the pie.

Final direction before consumption:

Chill at least 4 hours.
