Chicken pomegranate salad
Chicken Salad with Pomegranates and Almonds
makes 6 servings.
ingredients
- 2 pomegranates
- 1/2 cup golden raisns
- 1 lb cooked chicken breast meat, cut into 1" chunks
- 1/3 cup toasted sliced almonds
- 1 chopped apple
- 1/2 cup chopped or thinly sliced celery
- 1 tablespoon chopped Italian parsley
- 1/4 cup chopped green onions
- 1/4 to 1/2 tsp curry powder (optional)
- 1/3 cup extra-virgin olive oil
- 3 tablespoons balsamic vinegar
- salt and pepper to taste
directions
- In a large mixing bowl combine the pomegranate arils and seeds,
raisns, chicken, almonds, apple, celery, parsley, green onion and curry powder.
- In a small bowl, whisk together the olive oil and vinegar. Pour in
chicken mixture, mix well. Add salt and pepper to taste.
- Refrigerate until ready to serve.
